I started making homemade beef jerky in 2007. Around 2011, my cousin Paul and I spent over $5,000 researching opening a jerky company for a couple of years. We could not develop a viable business plan, and neither of us was willing to quit our full-time job, so I officially started the www.jerkyingredients.com jerky review website in January 2014. Plus, our Filipino wives were totally against launching a new jerky brand. Paul joined the jerky taste reviews in June 2014, and my co-worker Stéphane in 2016.
Jerky is not nearly as popular in Canada than it is in the United States of America. Generally, the further South and West you go in the USA, the more popular jerky becomes. California easily leads all USA states in the number of jerky brands.
Jerky Ingredients
For ideas on what ingredients to use in my homemade jerky, a jerky bag collection began in 2007. That became an exercise in what ingredients not to use in jerky. Jerky ingredient lists, in general, have improved appreciably since 2007, a continuing positive trend in the jerky industry.

JERKY SHRINE
The debut of the JERKY SHRINE was unplanned in January 2019. Instead of hiding all this jerky paraphernalia in binders, I displayed these jerky brands. The JERKY SHRINE has been well received to date. I would never have guessed how much fun it is to be a curator.

History
Operating a jerky review website (I hate calling it a blog) has been a fun, challenging, ongoing educational experience that is surprisingly time consuming. I was a former web application developer for over 15 years. I taught myself how to add the programming language PHP to the jerky reviews and website. Each jerky review is written in HTML, utilizing a custom MySQL database. This infrastructure gives excellent flexibility, for example, the Jerky Tags/Categories and Jerky Counters pages.

The other photograph is our Jerky Ingredients mascot Lexi, born in 2013. She is a Whippet, and she has tried over 700 jerky flavors. Whippets are not to be trusted off-leash. If I ever lose control off leash with Lexi, I say ‘JERKY?’ for her to return.
