The brisket cut of beef used is not guaranteed to be free of growth hormones or additional antibiotics. Also, the beef is not guaranteed to have at least partial free range access to graze on grass. As a result, the highest ingredient rating that can be awarded is a Good (8/10) rating.
The liquid marinade used here is comprised of water, a decent brand of hot sauce, an average brand of soy sauce, and liquid smoke.
The sugar is a little high at 6 grams of sugar per 28 grams of jerky to lose a rating. Our preference is 4 grams of sugar or less per 28 grams of jerky for a hot based flavor, as we have here. The salt level is fairly low at 220mg of salt per 28 grams of jerky.
This jerky does not qualify to have no sodium nitrite added as sodium nitrate is used outright as a preservative to lose a rating. Admirably, there is no MSG added.

When I open the bag I smell slight vinegar, and not much else. The pieces are sliced medium to large in size, and they are sliced thin to medium in thickness. The jerky is dry and reasonably rigid, somewhat similar to what our forefathers intended.
When I bite into the jerky I am met with medium salt, medium to high sweet, medium pepper, mild garlic, and possibly faint onion. There is also a quite discernible kick to it, just as advertised. The heat level increases as you consume more, which I love, and outside of the higher than appreciated sweet flavor, this is a very favorable snack. A little less sweet, and you’re looking at a 10/10, but we will have to settle with a 9/10.
Here is what Mark had to say about this Greenport Fire Hot Sauce beef jerky flavor from Greenport Jerky Company: “Thanks Paul for the accurate taste review. Paul pretty much sums up this flavor. The soy sauce is at a mild level. The heat from the Habanero peppers is definitely noticeable, with that burn effect. In fact, the hot sauce tastes great, and I would be very curious to try it on its own. As with Paul, unfortunately, I too found the sweetness to be at a too high level, otherwise, I would have been at a 10 rating also. A unanimous Very Good (9/10) taste rating will be awarded.”
