While it took near five years to accomplish, we have now officially reviewed 200 jerky distributors to date (December 2/2018) as our latest milestone to celebrate. The short definition of a jerky distributor is a company that distributes jerky. In reality, it is a little more complicated then that. Ideally, the jerky distributor would also be the same company that manufactures the jerky, but that is not always the case.
Many jerky makers will source out the actual jerky making process to a different company. We tend to favor calling this a private labeler, and jerky makers tend to call this a copacker. A private labeler will offer to use one of their own stock recipes, or use the custom recipe provided by the jerky maker. A copacker tends to mostly use the recipe provided by the jerky maker.

There are a long, exhausting number of government rules and regulations that need to be satisfied in order to sell jerky to the public legally. This is why so many jerky makers choose copackers, or a private labeler, where some of them will own a United States Department of Agriculture (USDA) or Canadian Department of Agriculture (CDA) certified facility to manufacture the jerky. USDA or CDA inspectors routinely inspect the jerky to ensure that it complies with these government regulations and rules, which changes from country to country, state to state, province to province, etc. Some jerky distributors can only sell jerky within their own state or province, while other jerky makers can sell their jerky nationally (USA) or federally (Canada). In many cases, a jerky distributor will manufacture jerky for multiple different jerky brands.
Even near five years later, we still need to implement temporary jerky submission freezes in place allowing us to get caught up in our current inventory, as is the case now unless the jerky is shipped directly to Ontario near Toronto. As we put more jerky reviews under our belt (668 reviews to date as of December 3/2018), our opinions (Paul/Stéphane/Mark) are widening, rather than conforming together.
Stéphane started participating in these taste review back in mid to late 2016, and officially took over writing the majority of taste reviews in November 2017. In 2014 and 2015, Paul and I were usually on the same page. In 2017, we were normally on the same page including Stéphane, but less compared to other years. In 2018, more and more of our taste reviews are at odds with each other than ever before. This is all good, where different strokes for different folks, and the key here is for us trying to find that balance. There is no 100% right or wrong here, it’s all personal opinion based on individual tastes. Nobody said that writing jerky reviews would be easy, or else everybody would be doing this. All three of us are passionate about jerky, and are strong willed with strong opinions. We will be vigilant and keep it up with these jerky reviews, where we still continue learning certain nuances about each other. Lately we have been referring to ourselves as jerky brothers, and we pride ourselves with our integrity and honesty.
Our jerky mascot Lexi just turned five years old recently (November 27), and holds the unofficial record of trying the most unique jerky flavors (easily over 300) of any other dog on Earth. Lexi knows the drill, when I start to photograph a jerky bag and strips, Lexi races down the stairs hoping to get a small treat of jerky, with an exceptional sense of smell. If Lexi hears the word ‘jerky’, her eyes light up in anticipation, which happens to be a frequent event in this household.
To date, we have reviewed jerky distributors from eight different countries. Each country with submitted jerky outside of North America reviewed to date have been a pleasure to review, and have top notch jerky. Beef, and by extension beef jerky, is gaining popularity in Eastern countries.
