This marks our first published post regarding the price of bison jerky. Unlike beef jerky, where the price of beef jerky is updated annually, bison jerky price updates have only been done a couple of times in the last six years. While I have been harping about the increased price of beef jerky since 2022, bison jerky has risen even more dramatically.
We treat bison and buffalo as the same, even though they are not. There are two kinds of bison, the American bison and the European bison, and two forms of buffalo, water buffalo and cape buffalo. Both are large, horned, oxlike animals. Bison have a hump at the shoulders, while buffalo don’t. Buffalo tends to have larger horns than bison.
In the process of finding 300 beef jerky makers for the 2022 and 2023 Beef Jerky Price Updates, we started noting what jerky makers also sell bison jerky, among other types of jerky. In this 2023 update, we managed to compile 30 different bison jerky makers across Canada and the USA. All jerky makers listed in this update sell bison jerky in bags of 1.75 ounces to 4 ounces. Bison jerky is more expensive than beef jerky and therefore is usually sold in smaller sizes to not scare away customers from the price of bison jerky.
In this 2023 bison jerky update, the price of bison jerky increased 50 cents for the second year in a row. A $1.00 price increase per ounce of bison jerky over the last two years is a significant jump.

For the most part, the first 10 jerky makers represent the cheap price range, the next 10 jerky makers define an average price range, and the remaining 10 jerky makers represent an expensive price for an ounce of bison jerky.
