Bubba MoSho Jerky is a family-owned business specializing in handcrafted beef jerky made from 100% USDA-certified beef. Their products are marinated in small batches and processed at an SQF Level 3 facility, the highest certification from the Safe Quality Food Institute, ensuring top-notch quality and safety. Customers have praised Bubba MoSho Jerky for its exceptional taste and quality.
The origins of Bubba MoSho Jerky trace back to the late 1970s near Pittsburgh, Pennsylvania, where George Mosho, a U.S. Marine and engineer, began experimenting with beef jerky as a hobby. This passion was passed down to his son, David, who added his own twist to the flavors and marinating techniques.
During the pandemic, David revived this family tradition, sharing the jerky with coworkers and gym members in North Charleston, South Carolina. The overwhelmingly positive response led to the official launch of Bubba MoSho Jerky in late 2022. By March 2023, their products were featured at the Historic Charleston City Market, bringing their small-batch artisanal jerky to a broader audience. This Bubba MoSho Jerky brand is distributed under the same name as Bubba MoSho Jerky, and it is located in Charleston, South Carolina.
The next review on Bubba MoSho Jerky will focus on a 2.5 ounce/71 gram bag of their Sweet Black Pepper flavored beef jerky. This flavor is described as having a strong Worcestershire and black pepper blend. The jerky was graciously submitted for review by Owner David Mosho.
Ingredient Review
Ingredients: Beef, Worcestershire Sauce (Distilled White Vinegar, Anchovies, Garlic, Molasses, Onions, Salt, Sugar, Water, Chili Pepper Extract, Cloves, Natural Flavorings, Tamarind Extract), Brown Sugar, Pure Maple Syrup, Garlic Powder, Black Pepper, Onion Powder, Paprika, Cumin, Cayenne Pepper.
The beef used is not guaranteed to be free of growth hormones or additional antibiotics. Also, the beef is not guaranteed to have at least partial free range access to graze on grass. As a result, the highest ingredient rating that can be awarded is a Good (8/10) rating.
The liquid marinade used here is a well-respected brand of Worcestershire sauce and pure maple syrup.
Some healthy ingredients added are garlic powder, black pepper, onion powder, paprika, cumin, and cayenne pepper.
The sugar level is very high at 9 grams of sugar per 28 grams of jerky to lose a rating. Our preference is 5 grams of sugar or less per 28 grams of jerky for a sweet based flavor as we have here. The salt level is very low at 160mg of salt per 28 grams of jerky.
This jerky does qualify to have no sodium nitrite or any other similar unhealthy preservatives. Instead, the main preservative used is salt. Admirably, there is no MSG added.

BUBBA MOSHO JERKY – SWEET BLACK PEPPER BEEF JERKY
Written by guest jerky reviewer Paul Rekker
When I open the bag I smell what I believe to be vinegar, and not much else. The jerky is small in size, and it is sliced to a medium thickness. The texture of the jerky is dry and reasonably rigid, just as our forefathers intended.
When I bite into the jerky I am met with decent salt, decent sweet, maybe a bit too sweet for me, but it is advertised as sweet, which it certainly is, but it is by no means overboard. I also detect mild garlic and onion, and I do detect the pepper, but it is by no means intense, which is what I was kind of hoping for.
Overall, this flavor of jerky is tasty, but it lacks any WOW!! factor. Therefore, I am awarding this flavor an 8.5/10, rounding up to a 9/10.
Here is what Mark had to say about this Sweet Black Pepper beef jerky flavor from Bubba MoSho Jerky: “Thanks Paul for the candid taste review. Yes, I was hoping for a stronger peppered level too. I agree, the sweetness is certainly present, but it is acceptable for a flavor name with the word ‘sweet’ in it. The most dominant flavor is the Worcestershire sauce, which most people would appreciate.”
“The overall taste profile is fairly well-balanced but not spectacular. I agree with Paul that there is not much ‘wow’ factor present. The flavor does taste good, and we appreciate the dry texture, which is borderline crunchy. I doubt that I would have guessed that this was a black pepper based flavor as it comes across more as an Original flavor. With Paul at a 9 and myself at an 8, a Very Good (9/10) taste rating will be awarded.”
This 2.5 ounce/71 gram bag of jerky sells online for $9.00. That works out to $3.60 an ounce, which rates as an average price.

Bag Review
This black, resealable plastic bag has labels affixed to the front and the back. The Bubba MoSho Jerky logo has the head of an angry looking bull.
A slogan could be “Charleston’s Favorite Beef Jerky”. The only fact printed on this bag is “Low Country Approved”.
Some missing bag categories are no blurb printed about Bubba MoSho Jerky or this flavor, and anchovy allergen alert. A QR code is displayed on the back.
