The next review for Wild Bill’s will focus on a 1 ounce/28 gram bag of their teriyaki beef jerky. This bag was purchased at a grocery store in Penn Yan, New York, in the summer of 2010.
Of all jerky brands reviewed to date, this Wild Bill’s is one of the most popular jerky brands out there. The Wild Bill’s brand name is owned by Monogram Meat Snacks, LLC., who are located in Memphis, Tennessee. Prior to being acquired by Monogram Meat Snacks, LLC. in 2009, the Wild Bill’s brand name originated in 1955 within Pennsylvania Dutch Country.
Ingredient Review
Ingredients: Beef, Seasoning (Salt, Soy Sauce Powder [Soy Sauce, Wheat, Soybeans, Salt), Maltodextrin, Salt, Brown Sugar, Dextrose, Spice, Paprika, Monosodium Glutamate, Onion Powder, Garlic Powder, Silicon Dioxide and Soybean Oil added to prevent caking), Brown Sugar, Sodium Nitrite. Sprayed with Potassium Sorbate Solution to Help Protect Quality). Allergen Warnings: Soy, Wheat
The beef used is not guaranteed to be free of growth hormones or additional antibiotics. Also, the beef is not guaranteed to have at least partial free range access to graze on grass. As a result, the highest ingredient rating that can be awarded is a Good (8/10) rating.
There is no liquid marinade used here. You could call that traditional jerky, or a dry rub.
Some healthy ingredients added are spice, paprika, onion powder, and garlic powder.
The sugar level is alright at 3 grams of jerky per 28 grams of jerky. The salt level is high at 510mg of salt per 28 grams of jerky. Our preference is 350mg of salt or less per 28 grams of jerky.
It is disappointing to see that the trifecta of sodium erythorbate, sodium nitrite, and potassium sorbate are used as preservatives.
Unfortunately, the flavor enhancer monosodium glutamate (MSG) is used.

These strips of jerky are mainly medium in size, and sliced to a medium thickness. The texture is on the dry side, being reasonable to chew.
Moderately strong levels of soy and salt are detected first, which could arguably be too salty tasting. There is some sweetness present, which does not go overboard for a teriyaki flavor. In the background is a light smoked flavor.
While flavorful and tasty, this flavor does not quite resemble a traditional teriyaki flavor. I do remember having very high expectations at the time, and being left somewhat disappointed.
This 1 ounce/28 gram bag of jerky cost $2.29, which rated as an average price in 2010.
Bag Review
This non-resealable plastic bag has a label affixed to the front, and nothing on the back. The Wild Bill’s logo is an old, short man with a beard and moustache wielding two long guns, dressed in old style clothes, kind of like a pirate.
There are no slogans or facts printed on this bag.
The only missing bag category is no blurb printed about Wild Bill’s or this teriyaki flavor. Admirably, Monogram Meat Snacks, LLC. provides a toll free phone number for customer inquiries.
