Of all jerky brands reviewed to date, this Wild Bill’s is one of the most popular jerky brands out there. The Wild Bill’s brand name is owned by Monogram Meat Snacks, LLC., who are located in Memphis, Tennessee. Prior to being acquired by Monogram Meat Snacks, LLC. in 2009, the Wild Bill’s brand name originated in 1955 within Pennsylvania Dutch Country.

The beef used is not guaranteed to be free of growth hormones or additional antibiotics. Also, the beef is not guaranteed to have at least partial free range access to graze on grass. As a result, the highest ingredient rating that can be awarded is a Good (8/10) rating.
The liquid marinade only consists of a poor quality soy sauce.
Healthy garlic, black pepper, and red peppers are used.
The sugar level is high at 7 grams of sugar per 28 gram of jerky. Our preference for a sweet based flavor as we have here is 5 grams of sugar or less per 28 grams of jerky.
The salt level is quite high at 510mg of salt per 28 grams of jerky. Our preference is 350mg of salt or less per 28 grams of jerky.
It is disappointing to see that potassium sorbate is listed twice in the ingredient list. Potassium sorbate acts as a preservative, and is similar to sodium nitrite.
This jerky does use a type of MSG in the form of hydrolyzed soy protein, which is a highly processed flavor enhancer.

At first glance, this jerky has a somewhat overwhelming taste of soy and saltiness. I’ve also notice a mild sweetness and it is much rather savory with a significant acidic taste. There is a light level of garlic and black pepper which blends in nicely although not completely even throughout every piece.
There is some sweetness which is within reason and not nearly as sweet as most common and regular teriyaki flavors. Some natural beef flavor is present and a light and subtle smokiness can be tasted in the background. This smokiness accentuates the overall flavor of this beef snack. This flavor is not typical or entirely reminiscent of a classic tasting teriyaki flavor while the soy accompanied by some salt is mostly being the dominant flavor in the forefront.
These jerky strips are mainly medium in size and sliced to a medium thickness. The texture is on the dry side and moderately leathery, these jerky morsels do require some effort to chew.
