100% grass-fed beef is used here, just the way nature intended. These cattle are raised ethically, meaning they are not fed growth hormones or additional antibiotics. There is also some free range access for the cattle to roam about. As a result, the ingredient rating starts at Excellent (10/10).
Keeping up with South African traditions of making biltong, with a little twist, super healthy apple cider vinegar is the only liquid used in the marinade.
Some healthy ingredients added are coriander, rosemary, and black pepper.
The sugar level is perfect at 0 grams of sugar per 28 grams of biltong. The salt level is a little high at 380mg of salt per 56 grams of biltong to lose a rating. Our preference is 350mg of salt or less per 28 grams of biltong.
This biltong does qualify to have no sodium nitrite. Instead, salt is the main preservative used, and to a lesser extent apple cider vinegar. Admirably, this biltong has no MSG added.

When I open the bag I smell biltong, which is hard to describe, but those familiar with biltong will understand. The biltong is small to medium in size, and the slices are pretty thin. The biltong is soft(ish) and chewy, just like pretty much all biltong.
The first flavors I encounter are salt, at a decent level, minimal sweetness, an excellent thing, much pepper, and garlic, which are both good things. This biltong is very similar in appearance, shape, and taste to most other biltong, which is a very good thing. Your typical biltong still rates as a 9/10 in my books. Gentlemen?
Here is what Mark had to say about this Original grass fed beef biltong flavor from Brooklyn Biltong: “Thanks Paul for the favorable taste review. It’s hard to disagree with anything Paul stated. One minor complaint is that the texture is not as soft, smooth, and shiny as most other biltong out there. This biltong may have been air dried at a slightly higher temperature than room temperature, where this biltong texture is somewhat close to a jerky texture.”
“There is a good level of tanginess from the apple cider vinegar. As with most biltong, thankfully, there is no sugar present. There are no signs of the natural beef flavor tasting processed. There are very few strips that have any fat, but the few strips that do, the natural beef flavor is accentuated to a wonderful level. For a flavor that boasts only six ingredients, the overall taste profile is very well-balanced, making this biltong addictive. A unanimous Very Good (9/10) taste rating will be awarded.”
