By no accident, Bronco Billy’s Beef Jerky does resemble the formerly trendy jerky brand Wild Bill’s Beef Jerky in every facet that also originated in Pennsylvania. After Monogram Food Snacks from Tennessee acquired Wild Bill’s Beef Jerky in 2009, many loyal customers have vented to us that Monogram Food Snacks ruined their beloved Wild Bill’s Beef Jerky brand. Especially in the last four or five years with Monogram cheapening their ingredients and using non-USA beef.

Ingredients: Beef, Tamari (Water, Soybeans, Salt, Alcohol), Spices, Crushed Red Pepper, Honey, Brown Sugar. Allergen Warnings: Soy
The beef used is ethically raised, meaning it is guaranteed to be free of growth hormones and additional antibiotics. Also, the cattle have at least partial free range access to roam about and graze on grass the way nature intended. As a result, the highest ingredient rating that can be awarded is a Very Good (9/10) rating.
The liquid marinade is comprised of a reputable brand of gluten-free tamari soy sauce, healthy honey, and water.
Healthy spices are used. The heat is achieved from the crushed red chili peppers, which are healthy if eaten in moderation.
The sugar level is on the high side at 6 grams of sugar per 28 grams of jerky to lose a rating. Our preference for a sweet & spicy based flavor as we have here is 4 grams or less of sugar per 28 grams of jerky. The salt level is high at 430mg of salt per 28 grams to lose a rating. Our preference is 350mg of salt or less per 28 grams of jerky.
This jerky qualifies to have no sodium nitrite, or any other similar unhealthy preservative added. Admirably, this jerky does qualify to have no MSG added.

BRONCO BILLY’S BEEF JERKY – SWEET HEAT BEEF JERKY

When I open the bag, I smell what I believe to be orange peels, or something similarly somewhat bitter, maybe vinegar?
The strips are large in size, and they are sliced pretty thin. The jerky is soft and dry, and these strips leave no oily residue on your fingers.
The first flavors I encounter are salt, sweet, but not too sweet, vinegar, slight garlic, possibly a dab of onion, and some heat.
The jerky is very good tasting overall, we have a melting pot of various flavors mingling together to create a very favorable taste, with no one flavor noticeably overpowering any other flavor.
I can only come up with one issue, or maybe not a problem, but one suggestion. While I taste the sweet and the heat, neither flavor is jumping out at me and claiming superiority over the other complementary flavors. While perusing over my review, it is reading as a 9/10, and I am very comfortable awarding this flavor as a 9/10. Gentlemen?
Here is what Mark had to say about this Sweet Heat beef jerky flavor from Bronco Billy’s Beef Jerky: “Thanks Paul for the honest taste review. I both smell and taste a fragrance similar to a barbecue flavor along with the flavor of soy, where I suspect tomato powder may have been added. I was at a 10 with this flavor being very impressed with the light heat, and the not too overwhelming sweetness. Again, I thought the barbecue type of flavor in the background blended in nicely with this sweet and spicy based flavor to produce a very well-balanced taste profile.”
Due to COVID-19 (and a mini-vacation), we are down to just Paul and me for this review. With myself at a solid 10 taste rating and Paul at a solid 9 rating, this presents a conundrum. Normally, I prefer to have minimum three people participate in these taste reviews to establish a majority taste rating. Without having that luxury here today, I will defer to Paul’s taste review and begrudgingly award a Very Good (9/10) taste rating.
This 3 ounce/85 gram bag of jerky sells online for $7.99, which works out to $2.66 an ounce. That rates as an average price. The price per ounce does go down if you order in larger quantities.
