JERKY JERKY – SPICY KOREAN BBQ BEEF BRISKET JERKY
Written by guest jerky reviewer Paul Rekker
When I open the bag I smell very little. The jerky is standard in length and girth (thickness) and appears very moist. When I handle the jerky it is very moist, and it leaves a lot of oily residue on my fingers. The hue of the jerky is also quite dark, indicating a large amount of marinade.
When I bite into the jerky I immediately taste salt, at a very good level, sweet, at a very manageable level, pepper, also great, as well as light garlic and onion. I also detect some heat, not intense, but very noticeable. A lot of fat is present, adding to the overall flavor with natural beef flavor. As I eat more, I am further detecting the heat. Again, it is not intense but very noticeable.
This is turning out to be a very favorable flavor experience, but I can’t say I’m picking up on much of the Korean BBQ flavor. It is not necessarily a bad thing to me, but it is not exactly as advertised. For that reason I am going to deduct a point, but otherwise it is a delectable treat. A very favorable 9/10 in my humble opinion. Gentlemen?

The Jerky Jerky Spicy Korean BBQ is exquisite. It has a ton of flavor and is really well balanced. The sweetness is reasonable, there is a hint of spiciness, which marries the sweetness to perfection. The saltiness and smokiness bring so much flavor to the party, exponentially elevating the flavor profile. This jerky is rich and full of flavor, and the flavor profile is also deep and complex. The texture is amazing and wraps this delicious jerky into pure goodness.
This jerky is on the oily side, and it could simply be that it’s about 100 degrees in my house. Regardless, I believe this adds even more flavor and texture, and I simply can’t find any fault. In my own opinion, the Jerky Jerky Spicy Korean BBQ well deserves 10/10 Taste Rating.
Here is what Mark had to say about this Spicy Korean BBQ beef brisket jerky flavor from Jerky Jerky: “Thanks Paul and Stéphane for the enthusiastic taste reviews. I agree with almost everything stated. I would not say that the texture is a standard thickness but sliced rather thin. There is good deal amount of fat present, which is a welcome surprise. I may agree with Paul that there is not enough Korean barbecue flavor present, but there are enough delicious flavors to negate that point. As for the spiciness, I would lean more toward Paul, saying that the heat is noticeable rather than a hint as Stéphane described the spiciness.”
“I wholeheartedly agree with Stéphane that the taste profile is rich, deep, complex, and well-balanced. I am not convinced the spiciness needed to be added in the first place, coming from a huge fan of spicy flavors. I too cannot justify any reason to deduct a rating. With Paul at a 9 rating and Stéphane and I at a 10 rating, a well-deserved Excellent (10/10) taste rating will be awarded.”
SIDE NOTE
Jerky Jerky was kind enough to throw in a 1 ounce bag of their original beef brisket jerky. That could be considered a submission. While I regret not doing a formal taste review, their original flavor would have easily received an Excellent (10/10) taste rating. Even more so with their Spicy Korean BBQ flavor, which had a great deal of natural beef flavor.
I also had the opportunity to sample a tiny piece of their garlic beef jerky, where the garlic came across in spades. in my opinion, Another 10/10 rating would have been awarded. I also sampled their Mango Habanero beef jerky flavor, which lacked in mango and Habanero flavors. It’s hard to tell where the sample may have been only a gram or two.
This 4 ounce/113 gram bag of jerky sells online for $17.00. That works out to $4.25 an ounce, which rates as an expensive price.

Bag Review
This resealable silver plastic bag has a label affixed to the front and nothing on the back. The Jerky Jerky logo displays a bull on what appears to be the state of California on a map. This bag is vacuum sealed, which is the best way to keep the jerky fresh tasting.
There are no slogans printed on this bag. Some facts displayed are “Gourmet Handcrafted” and “Brisket Beef Jerky”. A USDA stamp is printed but is different, stating that it is inspected for wholesomeness under the California Department of Food and Agriculture.
Some missing bag categories are a nutrition facts table, the jerky weight stated in grams, a soy allergen alert, and no blurb printed about Jerky Jerky or this flavor.
