The beef used is not guaranteed to be free of growth hormones or additional antibiotics. Also, the beef is not guaranteed to have at least partial free range access to graze on grass. As a result, the highest ingredient rating that can be awarded is a Good (8/10) rating.
The liquid marinade used here consists of an average brand of a gluten-free soy sauce, healthy vinegar, and healthy beef stock.
There are some healthy ingredients added such as spices, granulated garlic, and granulated onion.
The sugar level is acceptable at 5 grams of sugar per 28 grams of jerky for a sweet based flavor, as we have here. The salt level is quite high at 670mg of salt per 28 grams of jerky to lose a rating. Our preference is 350mg of salt or less per 28 grams of jerky.
This jerky does not qualify to be sodium nitrite free as sodium nitrite is used outright as a preservative to lose a rating. This jerky does not qualify to have no MSG added as the highly processed, cheap flavor enhancer hydrolyzed corn protein is used to lose another rating.

CATTLEMAN’S CUT – TERIYAKI BEEF JERKY

When I open the bag I smell teriyaki. The pieces are medium in size and sliced medium to thick. The texture of the jerky is decent, and there is no oily residue.
When I bite into the jerky, I taste lots of salt, which is a good thing. It is also an acceptable sweet and decent pepper. This is kind of perplexing, given that it is called a teriyaki flavor. It, to me, is much closer to an original flavor. And that suits me just fine because I am a much bigger fan of the original than I am of teriyaki.
However, the fact that it is listed as teriyaki, is somewhat misleading, as the flavor does not properly reflect that.
Therefore, while I found it to be quite tasty, to my surprise, I still will be deducting a point for not being as stated, at least flavor wise. A 9/10 is my assessment.
Here is what Mark had to say about this Teriyaki beef jerky flavor from Cattleman’s Cut: “Thanks Paul for the honest review. Going into this review, I expected Paul to be at a maximum 5 rating. For starters, I am not a fan of the texture, which does not have a well-defined grain to tear the strips and is close to being soft and tender, but not in a natural way. As Paul mentioned, the sweetness is acceptable (but certainly noticeable) for a Teriyaki flavor. I do not necessarily agree that this flavor comes across as tasting more like an Original instead of a Teriyaki flavor with the soy at a medium level and the onion and garlic at light levels. Sure, you could add more Asian flair with sesame, pineapple juice, mirin/sake, or ginger, but it passes as a Teriyaki flavor.
There is no ‘wow’ factor with this flavor, which comes across as pedestrian tasting, including the natural beef flavor. The overall taste profile is pretty well balanced but has no complexity to make it stand out and comes across as relatively simple. With Paul at a 9 and myself at a 6, a Good (8/10) taste rating will be awarded.”
This 2.5 ounce/71 gram bag cost $2.99, which works out to $1.20 an ounce. That rates as an extremely cheap price, granted it was purchased from the discount store Ollie’s.
