Figure Ate is a regenerative food brand specializing in South African–style beef biltong made from high-quality, grass-fed and grass-finished beef. The company focuses on producing clean, nutrient dense snacks using a traditional air-drying process rather than smoking or cooking the meat, resulting in a tender, steak like texture. Their biltong is typically marinated in vinegar and simple spices such as coriander and black pepper, then air-dried for about 2 weeks, creating a high protein snack with no added sugar, artificial preservatives, nitrates, or MSG.
Beyond making premium meat snacks, Figure Ate emphasizes sustainability and environmental stewardship. The brand sources its beef from ranches that practice regenerative agriculture, which improves soil health, biodiversity, and ecosystem balance. Figure Ate is also connected to the nonprofit White Buffalo Land Trust, meaning proceeds from the products help support initiatives that promote and expand regenerative farming practices.
Overall, Figure Ate positions its biltong as a clean ingredient, protein rich snack that combines traditional South African drying techniques with a modern focus on regenerative agriculture and sustainable food systems. This Figure Ate brand name is distributed by White Buffalo Land Trust, located in Santa Barbara, California. This biltong is manufactured by Stormberg Foods LLC, and is located in Goldsboro, North Carolina.
The first review on Figure Ate will focus on a 2 ounce/56 gram bag of their Original flavored 100% grass fed beef biltong. This flavor is described as being marinated in their signature persimmon vinegar, tumbled in organic coriander and black pepper, then air-dried for 14 days for unrivaled tenderness and flavor. The bag was purchased at an El Rancho Market Place store in Solvang, California.
Ingredient Review
Ingredients: Grass Fed Beef, Organic Wine Vinegar, Sea Salt, Organic Black Pepper, and Organic Coriander.
100% grass-fed beef is used here, just the way nature intended. These cattle are raised ethically, meaning they are not fed growth hormones or additional antibiotics. There is also some free range access for the cattle to roam about. As a result, the ingredient rating starts at Excellent (10/10).
The liquid marinade is comprised of only organic wine vinegar.
Some healthy ingredients added are organic black pepper and organic coriander.
The sugar level is perfect at 0 grams of sugar per 28 grams of biltong. The salt level is a little high at 760mg of salt per 57 grams of biltong. However, the salt level is ignored because healthy, minimally processed sea salt is used.
This biltong does qualify to have no sodium nitrite. Instead, sea salt is the main preservative used, and to a lesser extent organic wine vinegar. Admirably, this biltong has no MSG added.

FIGURE ATE – ORIGINAL 100% GRASS FED BILTONG
Written by guest biltong reviewer Paul Rekker
When I open the bag I don’t really smell anything. The biltong is medium in size, and it is sliced rather thin. The jerky is soft-ish, and it is a bit oily. There is an oily residue left on your fingers.
When I bite into the biltong I am met with salt, at a mild level, next to no sweet, and I am picking up on the garlic, it is at a decent level, but I can’t say that I am picking up any sort of herb taste. I have to say, this biltong tastes like a cross between regular jerky and biltong. All biltong, at least up to this point, have had a unique taste, noticeably different from regular jerky, but this biltong tastes like a hybrid version, combining the unmistakable flavor of biltong mixed with the traditional flavor of jerky. It’s more of an observation than a complaint, but I feel it needs to be said.
Overall, I am quite enjoying this biltong/jerky, it is unique, and tasty. The combination is actually favorably caressing my palate enough to award it a 9/10
Here is what Mark had to say about this Original 100% grass fed biltong flavor from Figure Ate: “Thanks Paul for the enthusiastic taste review. Paul makes an interesting observation, pointing out that this biltong is similar to jerky. Not so much taste wise but the texture. Biltong is air dried, which generally means the beef has a tendency to melt in your mouth and has a soft, shiny texture. This biltong seems to have been dried at a higher temperature than room temperature.”
“The flavor of garlic comes across fairly well. There are herbal tastes present that taste like herbs and not spices but at light levels. The saltiness is fairly strong, more so than your normal biltong. The familiar taste of coriander is present, a staple ingredient in biltong is at a mild level. Overall, I too enjoyed this biltong, leaving me wanting more. A unanimous Very Good (9/10) taste rating will be awarded.”
This 2 ounce/56 gram bag was purchased for $16.99, which works out to $8.50 an ounce. That rates as a very expensive price.

Bag Review
This blue resealable plastic bag has everything printed directly on the bag, both front and back. No labels are affixed to this bag. There are illustrations of biltong on the front and back.
There are no slogans printed on the bag. Some facts printed on this bag are “32g Protein”. “0g Sugar”, “Air Dried Beef”, “Made With 100% Grass Fed & Finished Beef”, “Restorative Foods From Regenerative Agriculture”, “No Artificial Preservatives, Nitrates, or Nitrites”, “Verified Land to Market”, “American Grassfed”, “Increased Biodiversity”, “Soil Health”, Water Cycle Health”, and “Climate Stability”.
The only missing bag category is a transparent window to view the biltong. A great blurb on the back explains how the beef is raised. There is a QR code printed on the back.
