Wild Bill’s – Hickory Smoked Beef Jerky From The Jar (Review #1)

Wild Bill's - Hickory Smoked Beef Jerky From The Jar (Review #1)Note: For a current live taste review on what may be a tweaked ingredient list, open up Wild Bill’s – Hickory Smoked Beef Jerky From The Jar (Review #2).

This will be the first review for Wild Bill’s hickory smoked ‘Jerky From The Jar’ style of beef jerky, referring to a mason jar. This 2.3 ounce/62 gram bag was purchased at a convenience store in Kearny, New Jersey back in 2011.

The Wild Bill’s brand name is owned by the very large company Monogram Meat Snacks, LLC., located in Memphis, Tennessee. Prior to being acquired by Monogram Meat Snacks, LLC. in 2009, the Wild Bill’s brand name originated in 1955 within Pennsylvania Dutch Country. Wild Bill’s had developed a famous reputation for their jerky in a mason jar over the last two decades.

Ingredient Review

Ingredients: Beef, Soy Sauce (Water, Salt, Hydrolyzed Soy Protein, Corn Syrup, Caramel Color, Potassium Sorbate), Seasoning (Garlic, Pepper, Red Pepper). (Sprayed with Potassium Sorbate Solution to Help Protect Quality).    Allergen Warnings: Soy

Wild Bill's - Hickory Smoked Beef Jerky From The Jar (Review #1)The beef used is not guaranteed to be free of growth hormones or additional antibiotics. Also, the beef is not guaranteed to have at least partial free range access to graze on grass. As a result, the highest ingredient rating that can be awarded is a Good (8/10) rating.

The liquid marinade only consists of a poor quality soy sauce.

Some healthy ingredients are added such as garlic, black pepper, and red pepper.

Admirably, there is no sugar used in this jerky. The salt level is quite high at 580mg of salt per 28 grams of jerky. Our preference is 350mg of salt or less per 28 grams of jerky.

This jerky does not qualify to be sodium nitrite free. Similarly unhealthy potassium sorbate is used as a preservative.

This jerky does not qualify to have no MSG added. The cheap, highly processed flavor enhancer hydrolyzed soy protein is used here.

Taste Review

Note: For a current live taste review, open up Wild Bill’s – Hickory Smoked Beef Jerky From The Jar (Review #2).

These strips of jerky are traditionally narrow sized, and sliced borderline thin. The strips of jerky are sliced with the grain. This texture is dry, which does give your teeth a work out. There are no visible signs of fat, and handling this jerky leaves no oily residue on your fingers.

You are greeted with overwhelmingly strong levels of salt, smokiness, and soy. A mild level of black pepper is a welcome addition.

There is no sweetness present at all. As a result, the smokiness and natural beef flavor is more accentuated.

This is the type of flavor that you would most likely love, or not care much for. You certainly need to be a fan of salt, soy, and a smoked flavor to fully enjoy this flavor.

This 2.3 ounce/62 gram bag of jerky cost $5.99. That equates to $2.60 an ounce, which rates as an expensive price back in 2011.

Good (8/10) – Taste Rating

Bag Review

This resealable plastic bag has everything imprinted directly on the bag, both on the front and back. The Wild Bill’s logo is an old, short man with a beard and moustache wielding two long guns, dressed in old style clothes, similar to a pirate.

One slogan printed on this bag is “Jerky From The Jar”. Some facts displayed on this bag are “85% Fat Free”, “0g Trans Fat Per Serving”, “Made In The U.S.A.”, and “Don’t Forget To Try Our Wild Bill’s Jerky Chews!”

All bag categories are covered here. A good blurb is printed on the back about Wild Bill’s jerky. To the credit of Monogram Meat Snacks, LLC., there is a toll free phone number provided for customer inquiries.
