The first review on Sikorski will focus on a 2.29 ounce/65 gram bag of their Smokin’ Cayenne flavoured pork jerky. This bag was purchased at a Metro grocery store in Brampton, Ontario, Canada.

Ingredients: Pork, Salt, Spices & Spice Extracts, Garlic, Glucose Solids, Sunflower Oil, Pea Fiber, Cultured Dextrose, Dextrose, Cayenne, Ascorbic Acid, Sodium Erythorbate, Sodium Phosphate, Sodium Nitrite, Naturally Wood Smoked, In Vegetable Casing (Sodium Alginate, Calcium Chloride).
The pork used is guaranteed to be raised ethically with no antibiotics and no added hormones. This pork is not guaranteed to have at least partial free range access to roam about outside. As a result, the highest ingredient rating that can be awarded is a Very Good (9/10) rating.
Some healthy ingredients added are spices, spice extractives, garlic, and cayenne pepper.
The sugar level is perfect at 0 grams of sugar per 30 grams of jerky. The salt level is very high at 630mg of salt per 30 grams of jerky to lose a rating. Our preference is 350mg of salt or less per 28 grams of salt.
This jerky does not qualify to have no sodium nitrite added, as sodium nitrite is used outright as a preservative along with sodium erythorbate to lose a rating. Admirably, there is no MSG added.

SIKORSKI – SMOKIN’ CAYENNE PORK JERKY

When I open the bag I smell vinegar, and nothing else. The meat stick is very long and quite thin, making it look somewhat different from your typical meat stick. The meat stick is really moist, and it leaves an oily residue on your fingers.
When I bite into the meat stick, I do not pick up on any “snap” to the collagen casing. The flavours that come out at me are salt, high, but well within reason (I actually LOVE the level of salt personally), next to no sweetness, also favourable to me, also great levels of pepper and garlic, onion, vinegar, natural beef and I actually do detect some heat from the Cajun, but not quite at the “smokin’ ” level that is advertised.
Overall, I am very impressed with this flavour, it is “da bomb”. All things considered, while taste wise it deserves a 10/10, because of the lack of snap and the mediocre level of Cajun heat, I am prepared to rate this flavour at a 9/10. Gentlemen?

On the bag itself, it states that this product is ‘jerky linx’. Paul interpreted this product as a pork stick, while I think that the most accurate description is a sausage. There is some heat present, but not at a high level, and it is enjoyable. The heat would rate a 1 out of 4, or possibly a 2 out of 5 on the heat scale.”
“I don’t agree with Paul in that there is no snap. You could say that there is minimal snap in these very thin ‘sausages’. I agree with Paul that the overall taste is very favorable, making this an addictive treat. A unanimous Very Good (9/10) taste rating will be awarded.”
This 2.29 ounce/63 gram bag of jerky sold for $11.99. That works out to $4.50 an ounce, which rates as an expensive price.

This non-resealable plastic bag has everything imprinted on the front and back. The Sikorski logo cleverly has two sausages to form an ‘S’. There are high resolution pictures of fresh hot peppers and cayenne pepper powder on the front.
There are no slogans printed on the bag Some facts printed on this bag are “1983”, “Ontario Finest Meat Competition – Award Winner”, “High in Sodium”, “Crafted in Canada”, “Naturally Wood Smoked”, and “Jerky Snacks”.
