Vinnie was taught a while ago by a jerky master who was retiring. They met because that Vinnie had been buying jerky from him for years. After all, it was delicious. Since then, Vinnie has experimented successfully with new flavors. Vinnie describes himself as a Meat Sherpa (#meatsherpa). A sherpa is meaning renowned for their skill in mountaineering. In 2015, Vinnie debuted Vinnie’s Old Time Jerky.
Currently, Vinnie’s Ol Time Jerky has 16 flavors available. Their flavors have a base heat of black pepper, red pepper, garlic, and Tabasco sauce. Vinnie’s Old Time Jerky is distributed under the same name of Vinnie’s Old Time Jerky, and it is located in Garland, Texas.
The next review on Vinnie’s Ol Time Jerky will focus on a 4 ounce/113 gram bag of their Project M flavored beef jerky. This flavor is described as using a local Texan brand of Schorlemer Haus brand of sweet and spicy mustard. The jerky was kindly submitted for review by the founder, Vince Inglhofer.

VINNIE’S OL TIME JERKY – PROJECT M (MUSTARD) BEEF JERKY
Disclaimer: somewhere along the way, the vacuum seal was broken. As a result, this jerky is not as fresh-tasting as it would have been.
Written by guest jerky reviewer Paul Rekker
When I open the bag, I smell sweet. The pieces are medium to large, and they are sliced rather thin. The jerky is soft and dry, and it leaves no oily residue on your fingers.
The first flavors I encounter are salt, at a decent level, minimal sweet (surprise), pepper, garlic, onion, natural beef, and I am picking up on the mustard at an adequate level.
I have to say that this flavor is quite tasty, the mustard flavor is very prominent, and I am picking up some heat from this flavor. Not too intense, rather mild, but at a very favorable level.
I cannot wax poetic about this flavor. Even though it is good, it is not blowing me away. It lacks in the ‘Wow!’ factor, but it is coming across as advertised and tastes rather good, so I am inclined to award it an 8/10, though a 9/10 is not out of the realm of possibilities. Gentlemen?
Here is what Stéphane had to say: “Great tasting jerky, it is flavorful and well balanced. I enjoyed it more and more after every bite. There is a good depth of flavor and a multi-layered flavor profile. The jerky has a nice little spicy edge paired with a light sweetness, a splash of acidity and just the right saltiness.”
“I really enjoyed this jerky, and I’d recommend it to anyone looking for something different. A 10/10 taste rating. Two thumbs way up!!!👍👍”
Here is what Mark had to say about this Project M beef jerky flavor from Vinnie’s Ol Time Jerky: “Thanks Paul and Stéphane for the taste reviews. I am full on board with Stéphane here. Unlike Paul, I was impressed with this sweet and spicy mustard-based flavor.”
“There is a great base of flavors to being with, and this Schorlemer Haus brand of sweet and spicy mustard sauce accentuates the flavor all that more. Top that off with a solid level of natural beef flavor highlighted by the fat. With these strips being sliced so thinly, you get the impression that there is more jerky than there is. My portion was devoured in no time, leaving me wanting much more.”
“Due to COVID-19, we are down to four members from the Group of Seven. Mark M. was at a 9. It’s too bad that the vacuum seal broke, where normally Vinnie’s Old Time Jerky is quite sticky and fresh tasting. With myself at a 10, Stéphane at a 10, Mark. M at a 9, and Paul at an 8, a Very Good (9/10) taste rating seems warranted. Great job once again, Vinnie, aka the Meat Sherpa.”
This 4 ounce/113 gram bag of jerky sells for $18.00. That works out to $4.50 an ounce, which rates at a pretty expensive price.

Bag Review
This is just a clear non-resealable plastic bag. The bag is vacuum-sealed, the best possible way to keep jerky fresh tasting.
There are no slogans or facts printed on this bag.
There are too many bag categories missing to list them all.
