The next review on Carmichael’s will focus on a 2.8 ounce/80 gram bag of their Peppered flavoured beef jerky. This flavour is described as made with chunks of real beef (eye of the round) that is full of flavour and great for travelling. The bag was purchased at the Canadian National Exhibition in Toronto, Ontario, Canada.

Ingredients: Beef, Water, Sugars (White Sugar, Dextrose), Salt, Spices, Caramel Color, Spice Extract, Flavour, Sodium Erythorbate, Sodium Nitrite. Allergen Warnings: Soy, Mustard
The beef used is not guaranteed to be free of growth hormones or additional antibiotics. Also, the beef is not guaranteed to have at least partial free range access to graze on grass. As a result, the highest ingredient rating that can be awarded is a Good (8/10) rating.
The liquid marinade uses only water. While soy is classified as an allergen, no soy products are listed.
The sugar level is acceptable at around 4 grams of sugar per 40 grams of jerky. The salt level is reasonable at 370mg of salt per 40 grams of jerky.
This jerky does not qualify to have no sodium nitrite added as sodium nitrate is used outright, along with sodium erythorbate as a preservative to lose a rating. Admirably, this jerky does qualify to have no MSG added.

CARMICHAEL’S – PEPPERED BEEF JERKY

When I open the bag I smell basically nothing. The pieces are small to medium in size and sliced thin to medium in thickness. The jerky is soft and shiny, but they do not leave any oily residue on your fingers.
When I bite into the jerky I pick up immediately on the salt at a reasonable level. Strong, but not too intense, well within reason. To a lesser degree, I detect sweet, also well within reason. I also pick up on the strong pepper flavour, it shines through and greatly enhances the overall flavour of the jerky. I also detect slight garlic, onion, and a bit of a tang. Not sure where the tang is coming from, but I am not privy to the ingredient list, so I am not sure where the tang is coming from. Maybe the pepper? Anyway, I am thoroughly enjoying this peppered flavour of jerky. I don’t think the beef is processed. It has too much flavour to be processed, in my opinion.
This jerky flavour is coming across exactly as advertised and being a card-carrying fan of pepper, I am compelled to rate this flavour of jerky at a 10/10. Gentlemen?

The Carmichael’s – Peppered Beef Jerky is tasty, and the Black Pepper is at a decent level. Although I like this jerky, I feel something is missing or could have been more. The seasoning is light and rather subtle, and the flavour profile is missing some richness and depth. The texture, aroma and taste are fine and, to some extent, somewhat common with mass jerky makers. I am unsure, but some may describe this observation as being or tasting processed.
This jerky is good, and I wish there would have been more “sparkles”. I believe a splash of acidity, a little smokiness and an extra punch of umami could have done wonders for this jerky.
I can’t go too hard on Carmichael’s, as I’ve enjoyed this jerky. I think they mostly accomplished what they had set themselves to do, and I am comfortable with a 9/10 Taste Rating.

While the peppered flavour is present, it is by no means a strong or bold peppered flavour. I cannot say that I picked up a tangy flavour. I tend to agree with Stéphane that the seasoning is light and that something else added to the overall flavour profile would be helpful with no ‘wow’ factor present.”
“I disagree with Stéphane and Paul in that the beef does not taste processed. There is a slightly processed beef flavour, but it is not all that distracting. With Paul at a 10, Stéphane at a 9, and myself at an 8 or 7, a Very Good (9/10) taste rating will be awarded.”
