Sierra Madre Provision Co. - Cowboy Beef JerkyThe Sierra Madre Provision Co. jerky brand name is distributed and manufactured by Sierra Madre Provisions. They are located in Sierra Madre, California, which is in the foothill of the San Gabriel Mountains. They have been in business for over 30 years selling wholesale and retail, using ranch raised cattle. Their meat is hand sliced, and Sierra Madre Provision Co. not so long ago introduced a totally revamped web site.

The next review on Sierra Madre Provision Co. will focus on a 3.25 ounce/92 gram bag of their cowboy beef jerky flavor. This flavor is described as old school jerky, for the gourmet Cowboy. The jerky was graciously submitted by the creator of this Sierra Madre Provision Co. jerky brand, James Schaft (a.k.a. – Jimmy the Jerky Man).

Ingredient Review

Ingredients: Beef, Soy Sauce (Water, Wheat, Soybeans, Salt, Sodium Benzoate), Water, Black Pepper, Garlic, Vinegar, Onion Powder, Liquid Smoke, Cure Mix (Salt, Sodium Nitrite).    Allergen Warnings: Soy, Wheat

Sierra Madre Provision Co. - Cowboy Beef JerkySierra Madre Provision Co. uses ranch raised beef, which means the cattle have free range access to graze on grass. The cattle are also ethically raised, meaning that the cows received no growth hormones or additional antibiotics. As a result, the highest jerky ingredient rating that can be awarded is a Very Good (9/10).

The liquid marinade here consists of an average soy sauce, healthy vinegar, water, and liquid smoke.

Some healthy ingredients are added such as garlic, black pepper, and onion powder.

There is no nutrition facts table provided. As a result, the exact sugar and salt levels are unknown. Based on the taste alone, the salt level for sure is over 350mg of salt per 28 grams of jerky to lose a rating.

This flavor does not qualify to be sodium nitrite free, as sodium nitrite itself is used as a preservative to lose another rating. Commendably, this jerky does qualify to have no MSG added.

Decent (7/10) – Ingredient Rating

Taste Review

These strips of jerky are large in size, and sliced medium to thick. The texture is rather dry, just the way a Cowboy style of jerky should be. Chewing requires a reasonable amount of effort. The aroma of these strips are mostly soy and garlic to a lesser extent.

The first taste detected is a strong level of saltiness, mixed in with a fairly strong level of black pepper. One may say that it’s too salty tasting, but the pairing of salt & black pepper is a winning combination that works its magic. Chewing more brings on a mild level of soy flavor. The cracked black peppers offer a great little kick.

What puts this flavor over the top is a good consistent ratio of onion and especially garlic, making this flavor highly addictive. Well, add a nice splash of acidity from the vinegar to that list.

There is no sweetness present as a refreshing change, and there is an abundance of natural beef flavor. In the background is a subtle flavor of smokiness to round off the flavor.

Paul was equally as impressed with this to cleverly state: “As I bite into my first piece I am encountering a strong salt taste, along with very strong pepper. I believe I am also tasting the pineapple juice, along with a solid kick. Garlic and onion make a subtle appearance. I’ve never been to a rodeo before, but, “mon dieu”, if this is the jerky that the cowboys are eating, swing that lasso, slap my backside and “gitty up”!! Let’s buck that d*mn bronco all the way to cowboy country, I needs me some more of that delicious beef jerky. Sierra Madre Provision Co., tip that sombrero, you have come up with a hollerin’ delectable beef jerky. An emphatic 10/10 gentlemen cowboys, swashbucklin’s never been so fun…🐴 YEE HAA!!!! 🐴”

Things were no different with Stéphane to expertly state: “This Sierra Madre Provision Co. Cowboy Beef Jerky is beyond exquisite, the aroma is sublime and the flavors are out of this world. This jerky is amazingly addictive; I’ll tell you what! I saw the bottom of my bag before I even had time to type my first word. I distinctively taste an abundance of rich and delicious flavors of cracked black pepper, garlic and onion and a lovely smoky and vinegary finish. This is truly a fine and delectably marvelous jerky; there is richness and decadence in this fine little gem. I simply couldn’t get enough of this Sierra Madre Provision Co. Cowboy Beef Jerky. I absolutely agree 110% with my brothers and I am also at an easy 10/10 taste rating on this one.”

No doubt that this Cowboy flavor delivers in being old school. It’s a simple, delicious flavor for beef aficionados. We highly recommend this flavor to people who just simply enjoy a somewhat plain tasting beef jerky, aka Cowboy Style.

This 3.25 ounce/92 gram bag sells for $6.99, which works out to $2.15 an ounce. That rates as a cheap price.

Bag Review

This is a fairly tall bag. The front is gold colored, and the back is silver colored with nothing on the back. There is a label affixed to the front, plus a separate sticker that states “Cowboy”. The scenic picture on this bag depicts mountains, including a few California palm trees.

There are no slogans printed on this bag. The only fact printed on this bag is “Liquid Smoke Flavoring Added”.

There are a few bag categories missing, such as a blurb about Sierra Madre Provision Co. and a nutrition facts table. Kudos to Sierra Madre Provision Co., where they provide a toll free phone number for customer inquiries.
