RED TRUCK BEEF JERKY – CAJUN FLAVORED ALLIGATOR PORK STICK

When I bite open the bag, I smell next to nothing. The meat stick is shaped just exactly like all other meat sticks. The hue is lighter than most, and the collagen casing does not properly ‘snap’ like some others.
The first flavors I encounter are salt, at a very enjoyable high level, next to no sweet, garlic, onion, and the Cajun flavor is definitely present. I detect slight onion in the background.
This meat stick is coming across precisely as expected, although I’ve never had alligator anything before, so the alligator taste will remain anonymous, as I can not say for sure that is what I am tasting. However, what I am tasting is an exceptionally flavourful meat stick, complete with the Cajun spice, as well as enough other delectable flavors to make this a supremely succulent snack, sufficiently saturated with splendid spices and stuffed with salient seasonings to spruce up your senses. D*mn, this is a ridiculously addictive meat stick, sign me up, let’s all get in our nearest Red Truck and drive like Mario Andretti to our closest bayou to grab us some more ‘gator, we got some more alligator meat sticks to procure and consume. An undeniable 10/10 gentlemen. Saddle up!!

I’ve enjoyed the Red Truck Beef Jerky – Cajun Alligator, the overall taste is good, and the Cajun flavor is on point. The spices are very flavorful, with the Cayenne at the forefront. The spiciness is well balanced and compliments the meat perfectly without overtaking the taste.
My only issue, the gator is barely noticeable. The gator meat for the most part and depending on the cut, is very mild. While mixed with pork, I could barely notice the taste or smell. I especially paid close attention to the gator aroma and taste and found it was mostly and unsurprisingly overwhelmed by the pork and spices.
In the end, I liked this meat stick mostly for other reasons. If I objectively rate this snack on its claim and merit, I’d rate it somewhere between 8 and 9 out of 10.

True in that this meat stick tastes fantastic. True in that the cajun flavor comes across nicely. Also true that there is no discernable taste or smell of alligator present. The pork overwhelms the alligator flavor, but kind of hard to complain as to the best of my knowledge, the FDA forces jerky makers to mix exotic meat sticks with another meat, normally pork. You could say that this is an enhanced pork flavor.”
“One other complaint is that the texture lacks a ‘snap’ for a meat stick to lose a rating. Paul later vehemently argued that this flavor could not lose two ratings. True, this cajun flavor is just too good tasting. A Very Good (9/10) taste rating will be awarded despite the lack of alligator flavor.”
