Sierra Madre Provision Co. – Original Beef Jerky (Recipe #2)

Wednesday, August 1, 2018 1 Comment

Sierra Madre Provision Co. - Original Beef Jerky (Recipe #2)The Sierra Madre Provision Co. jerky brand name is distributed and manufactured by Sierra Madre Provisions. They are located in Sierra Madre, California, which is in the foothill of the San Gabriel Mountains. They have been in business for over 30 years selling wholesale and retail, using ranch raised cattle. Their meat is hand sliced, and Sierra Madre Provision Co. recently introduced a totally revamped web site.

The next review on Sierra Madre Provision Co. will be on a 8 ounce/227 gram bag of their original beef jerky flavor. It will be the second review on this original flavor, where the bag design has since been tweaked, as with the ingredient list since 2014. This jerky was graciously submitted by the creator of this Sierra Madre Provision Co. jerky brand, James Schaft (a.k.a. – Jimmy the Jerky Man).

Ingredient Review

Ingredients: Beef, Spices (Salt, Spices, Sugar, Garlic, Paprika, Hydrolyzed Soy Protein, Soybean Oil (as a Processing Aid), Spices Extractives.    Allergen Warnings: Soy

Sierra Madre Provision Co. - Original Beef Jerky (Recipe #2)Sierra Madre Provision Co. uses ranch raised beef, which means the cattle have free range access to graze on grass. The cattle are also ethically raised, meaning that the cows received no growth hormones or additional antibiotics. As a result, the highest jerky ingredient rating that can be awarded is a Very Good (9/10).

There is not really much of a liquid marinade used here except for a small amount of soybean oil. This is more of a dry rub as opposed to gourmet jerky.

There are some healthy ingredients added such as spices, paprika, and garlic.

There is no nutrition facts table provided. As a result, the exact sugar and salt levels are unknown.

This flavor does qualify to be sodium nitrite free, as well as from any other similar unhealthy preservatives. Instead salt is the main preservative used. This flavor does not qualify to have no MSG added because the highly processed unhealthy flavor enhancer hydrolyzed soy protein is used to lose a rating.

Good (8/10) – Ingredient Rating

Taste Review

Written by guest jerky reviewer Stéphane Leclerc

A true gem on so many levels and an amazing jerky treat, this Sierra Madre Provision Co – Original Beef Jerky explodes with such flavor and the texture is nothing short of extraordinary.

The natural flavor of beef and a moderate saltiness exceeds and grabs the jerky aficionado’s attention right from the start. Each strip uncovers a subtle black pepper, paprika, soy and garlic flavor and beautifully complements this sublime flavor profile.

As an Original flavor the natural beef flavor should be the dominant flavor and this flavor absolutely delivers on natural beef flavor in spades. It is rich and decadent; it is a meat lovers dream. Some strips are slightly oily, they tend to melt in your mouth and they’re addictive as heck.

Although, Soybean oil is not typically used to improve the taste, it seems to be doing a really good job here and as Paul highlighted the buttery taste in his review and we totally agree. This jerky has a velvety and buttery taste and it is most enjoyable.

These strips of jerky are quite substantial with a medium thickness. The texture is rather dry and somewhat inconsistent, as some strips are reasonably easy to chew while others are a bit more challenging. There are some visible signs of fat, it greatly accentuates the beef natural flavor and it makes this flavor irresistible. I do appreciate the variation in texture; I find it brings a fun and exciting element to this jerky. I find myself fishing for my favorite texture while still enjoying each and every strip.

I’ll extend the “mic” to Mark and let him spread his wings and express himself: “I was pretty much helpless on pacing myself with my portion. I found this flavor to be addictive as heck. This Original flavor is positively recommended to even the slightest fans of beef. Being so lightly seasoned, this would be an ideal snack for kids who cannot handle even slightly spicy or bold tasting flavors. I with no compunction whatsoever am awarding this flavor a well-deserved Excellent (10/10) taste rating (insert applause in the background).”

Paul echoed the following sentiment from his man cave at an undisclosed location: “Guys, this is the taste and texture every jerky maker should be striving to achieve; this is exceptionally tasty for an original flavor. Do I detect an almost buttery flavor in some of my bites? I think so. I am thoroughly enjoying this jerky, and I am trying my best not to devour it all in one sitting.”

Well, this is it! Sierra Madre Provision Co – Original Beef Jerky would certainly convert any hardcore vegetarian or vegan out there and I mean that in a very delicate, non-judgmental, accepting, loving and sharing kind of way …Kumbaya!

Sierra Madre Provision Co – Original Beef Jerky have earned a very enthusiastic 10/10 taste rating and our customary two thumbs up …way up!! Cheers!

This 8 ounce/227 gram bag sells for $13.99, which works out to $1.75 an ounce. That rates as a cheap price. We have not quite confirmed the price as of this publication.

Excellent (10/10) – Taste Rating

Bag Review

This is a very tall clear plastic bag. Surprisingly for such a large quantity of 8 ounces/227 grams, this bag is not resealable. This bag is vacuum sealed, the best way to keep jerky fresh tasting. The scenic picture on this bag depicts mountains, including a few California palm trees.

There are no slogans or facts printed on this bag.

There are a few other bag categories missing, such as a blurb about Sierra Madre Provision Co. and a nutrition facts table. Kudos to Sierra Madre Provision Co., where they provide a toll free phone number for customer inquiries.

Alright (6/10) – Bag Rating
